Is there anybody out there that can say “Green eggs” without wanting to add “and ham” to the end? I have never read a Dr Suess book, I don’t even know what that story is about (except that there is a fella called Sam involved), yet green eggs and ham are forever linked in my mind. I am in mad study mode at the moment with my Fortified Wine exam only two weeks away. Study time is my danger zone, I get a bit blue because I lose all my fun time. This usually results in comfort food. However giant toasted sandwiches and huge bowls of creamy porridge tend to make me sleepy (and a little podgy). I have another eighteen months of regular exams so I am trying to set good habits to get me through this period without needing to buy an entire new wardrobe. This recipe is right on track. Full of nutrients and protein, it fills me up without making me feel heavy, and eggs always feel a bit comforty.

Mushrooms rubbed with smoked paprika and olive oil and lightly fried make the perfect base for delicious herby eggs. These eggs are smashed rather than scrambled. Instead of whisking beforehand, you stir them as they cook, resulting in little flecks of yolk and white. I like the effect and I also like that you don’t have to wash an extra bowl. #lazy

Plunging the basil and garlic straight into the olive oil after chopping allows all the natural oils to be released into the cooking oil, resulting in beautiful fragrant eggs. Topped with edible flowers and chunks of labneh, this healthy brunch is sure to chase the study blues away.

Green Eggs and Mushrooms
Smashed herby eggs served on paprika rubbed field mushrooms. A healthy, low-carb, high protein brunch

Ingredients
  1. Two large flat mushrooms
  2. Two eggs
  3. A tablespoon of chopped basil (about 4-5 leaves)
  4. 1 clove garlic
  5. 2 tablespoons olive oil
  6. smoked paprika
  7. Cheese and edible flowers to serve
Instructions
  1. Finely chop basil and garlic and place in a small saucepan with 1 tablespoon of olive oil
  2. Heat a frypan over medium heat.
  3. Rub mushrooms with a drizzle of oil and smoked paprika
  4. Pan-fry until cooked, turning regularly.
  5. Set aside
  6. Place small saucepan containing basil, garlic and oil over a low heat
  7. Crack in eggs and cook over low heat, gently stirring, for a few minutes.
  8. When eggs look almost done, remove from heat- they will continue to cook
  9. Drain mushrooms on paper towel and place on a plate.
  10. Top with eggs
  11. Garnish with cheese
Notes
  1. Cooked mushrooms release a lot of moisture so use paper towel to absorb some of it before plating.
  2. I love topping eggs with labneh but feta or finely grated parmesan is also delicious

  3. This looks and sounds delicious. I’m actually just starting to experiment with eggs again. I stopped eating them when I went from vegetarian to vegan. I didn’t stay vegan for long, but stayed off the eggs for awhile. I’m back to trying to figure out what works best for my body and makes me feel my best, so eggs are back for now. Definitely saving this!! My boyfriend would love it too. Good luck with your studies 🙂

    • Wow, vegan is so tough. I am not even vegetarian but meat only makes a cameo appearance in my diet and I try to use ethical sources as much as possible. Justifying, justifying…
      There are a lot of happy egg-laying chooks so if you can find a good local source they are a great, super-healthy protein source.
